Tasty Tuesday ~ 2 Ingredient Apple Pie Cups



2 Ingredient Apple Pie Cups

Ingredients

1 can (13 oz) Pillsbury refrigerated flaky cinnamon rolls with buttercream icing
1 1/3cups more fruit apple pie filling (from 21-oz can), coarsely chopped


Directions

Heat oven to 375°F. Spray 8 regular-size muffin cups with cooking spray. Set icing aside. Separate dough into 8 rolls. Press into and up sides of muffin cups.

Spoon 2 generous tablespoons pie filling into each dough-lined cup.

Bake 14 to 18 minutes or until golden brown; cool in pan 5 minutes.

Transfer icing to small microwavable bowl. Microwave uncovered on Low (10%) 8 to 10 seconds or until thin enough to drizzle. Place rolls on serving plate; spoon icing over rolls. Serve warm.

On the menu for this week... Menu for the week:
Monday ~ sketti, garlic bread and a salad
Tuesday ~ tacos, spanish rice and Mexican Ice Cream for dessert
Wednesday ~ breakfast
Thursday ~ pizza
Friday ~ fish, cheesy potates, mixed veggies
Saturday ~ not sure yet, maybe take out
Sunday ~ pork chops, mashed potatoes/gravy, corn, rolls


On my to do list... housework, working on craft projects, working out, getting things ready for my trip to Florida!!

In the craft basket...working on a new afghan for my oldest, crocheted pumpkins, and occasionally picking up a cross stitch project.

Mexican Ice Cream

Mexican Ice Cream

Ingredients

2 cups vanilla ice cream
1/2 cup frosted cornflakes, crushed
1/4 cup sugar
1 teaspoon ground cinnamon
1/4 cup honey


Directions

Place four 1/2-cup scoops of ice cream on a waxed paper-lined baking sheet. Freeze for 1 hour or until firm.

In a shallow bowl, combine the cornflake crumbs, sugar and cinnamon. Roll ice cream in crumb mixture to coat. Freeze until serving.

Drizzle each serving with 1 tablespoon honey.

Disney's ~ “Nutcracker and the Four Realms”

Can't wait to see this movie. It will be on my list to do once I get back from Florida.

Tasty Tuesday ~ Apple Pork Chop Bake



Apple Pork Chop Bake

INGREDIENTS

4-6 boneless pork chops
2-3 apples, peeled and sliced
1/4 cup (1/2 stick) unsalted butter
1/4-1/3 cup brown sugar
1 teaspoon cinnamon, divided
1/2 teaspoon nutmeg, divided
1/2 tablespoon cornstarch, optional
Kosher salt and freshly ground pepper, to taste


PREPARATION

Preheat oven to 350º F

Place sliced apples in the bottom of a large baking dish and sprinkle with 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg.

Place pork chops on top of apple slices and season generously with salt and pepper.

In a medium saucepan over medium-high heat, combine butter and brown sugar, whisking until melted and incorporated, then stir in remaining cinnamon and nutmeg.

Also whisk in cornstarch, if using. (Cornstarch isn’t essential, only for if you want a thicker glaze.)

Pour mixture over pork chops and apple slices, then place in oven and bake for 35-40 minutes, or until pork is cooked through.

Remove from oven and enjoy.

The weather...Its 55° with a high of 83° today...this up and down of the temps is starting to get to me... I am ready for the cool, crisp Fall days!!

As I look outside my window...the day is just starting to break

On the breakfast plate. . .water, and a blueberry bagel

On my bedside table... my alarm clock, Kindle, iPad and a journal

On my reading pile... nothing at the moment

Movies or Shows I watched this weekend... on Netflix - Christian Mingle - and cleared out the DVR of shows I recorded from the week

On my TV... Walking Dead, Chicago Series : Med, Fire, PD, Resident, 911 Blue Bloods

On the menu for this week... Menu for the week:

I can't wait to display different things through out the seasons and holidays. I have wanted one of these for so long, and love that this didn't cost me a lot! And then a pic of my sweet Lici

Tasty Tuesday ~ Apple Taquitos



Apple Pie Taquitos

Ingredients

Apple pie filling (1 can)
12 medium soft flour tortillas
1/4 cup butter unsalted, melted
1/2 cup sugar
1 tsp cinnamon


Instructions

Preheat oven to 350 F degrees. Brush a 9x13 baking dish with some of the melted butter.

In a shallow plate mix together the sugar and cinnamon.

Empty the can of pie filling onto a cutting board and chop the apples into smaller pieces with a knife.

Lay a tortilla flat and top with a couple tablespoons of the apple pie filling. Tightly roll up the tortilla. Brush the taquito with butter the roll it through the sugar/cinnamon mixture. Place the taquito in the prepared baking dish.

Repeat with remaining tortillas and apple pie filling. You should have enough filling for the 12 tortillas.

Bake for about 15 minutes or until the taquitos start to get golden on top.

Serve with caramel sauce if preferred.
