Tasty Tuesday ~ Summer Pasta Salad



Ingredients

16 oz pasta, cook according to package
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
2-3 cucumbers, chopped
1-2 containers of grape tomatoes, quartered
1 16 oz Zesty Italian dressing
1 TBSP McCormick Salad Supreme seasoning (can add more if like)


Mix all ingredients together, chill and serve.

You can add chunks of pepperoni, or other vegetables of your liking.

For Today... June 19th, 2017

The weather...Its 60° and the sun is shining!! We are in for a much cooler week to kick off the official start of Summer. Last week was a hot one, which I loved, but my pup not so much.


Right now I am... working on this blog post and eating a bowl of Frosted Mini Wheats.

On my reading pile... Etched...Upon My Heart by Jill Kelly; Sisterland by Curtis Sittenfeld; and Happily Ever After by Trista Sutter


Movies or Shows I watched this weekend... I binged watched The Ranch on Netflix

On my TV... Heartland is on the DVR - and on the tube tonight is Bacherlorette

On the menu for this week... Menu for the week:
Monday ~ spaghetti, garlic bread and a salad
Tuesday ~ polish dogs, fries and beans
Wednesday ~ eggs, bacon/sausage and toast
Thursday ~ pizza
Friday ~ fish, rice and a salad
Saturday ~ not sure yet
Sunday ~ pork chops, mashed potatoes/gravy, corn and rolls

On my to do list... laundry, housework, make dog food, work on the afghan

In the craft basket...working on and "Old MacDonald" themed afghan ~ its getting there, a few more faces and border, then to get some flannel to line the back

Whipped this Teddy Bear Lovey out, to send off to a friend for her new grandbaby

Tasty Tuesday Chocolate Chip Cookie Delight

Ingredients

1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough
1 package (8 ounces) cream cheese, softened
1 cup confectioners’ sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided
3 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
1 package (3.4 ounces) instant vanilla pudding mix
Chopped nuts, chocolate curls and miniature semisweet chocolate chips, optional

Directions

Let cookie dough stand at room temperature for 5-10 minutes to soften.

Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until golden brown. Cool on a wire rack.

In a large bowl, beat cream cheese and confectioners’ sugar until smooth. Fold in 1-3/4 cups whipped topping.

Spread over crust.

In a large bowl, whisk milk and pudding mixes for 2 minutes.

Spread over cream cheese layer.

Top with remaining whipped topping.

Sprinkle with nuts and chocolate curls if desired. Cover and refrigerate for 8 hours or overnight until firm.

Yield: 15 servings

Tasty Tuesday ~ Black bean and corn salsa

A quick and easy salsa to whip up. Serve with chips, on baked potatoes, with grilled chicken, on tacos and burritos, or anyway you can think of!


Black Bean and Corn Salsa

Ingredients

2 (8 ounce) cans Rotel tomatoes & chilies (I use "regular" as opposed to "mild" or "hot")
1 (14 ounce) can Mexican-style corn
1 (16 ounce) can black beans
1 (4 ounce) can green chilies (optional)
1 cup diced sweet onion
garlic powder, to taste
chili powder, to taste
cumin, to taste
1⁄2 cup coarsely chopped fresh cilantro
dried cilantro, to taste (if you dont use fresh)
salt and pepper, to taste

Directions

Except for one can of the Rotel tomatoes, drain canned vegetables.

Mix together all ingredients, making sure spices are well blended in the veggies.

Cover and refrigerate, allowing flavors to blend.

The weather...Its 58° and the sun is shining!! The high is 75°, its looking like a cool week, until the weekend then its in the 80/90's!


Right now I am... working on this blog post and watching Talking Dead -Fear the Walking Dead.

Movies or Shows I watched this weekend... We watched some documentary on John Lennon - I don't remember the name of it... but it was so very strange.

On my TV... Heartland and Prison Break are waiting for me on my DVR

Monday ~ ravioli, garlic bread and a salad
Tuesday ~ polish dogs, beans, and a fruit salad
Wednesday ~ eggs, sausage, toast and oranges
Thursday ~ pizza
Friday ~ grilled pork chops, grilled potatoes, green beans and rolls
Saturday ~ not sure yet
Sunday ~ going out after church

On my to do list... laundry, housework, make dog food, working on a DIY project

In the craft basket...working on and "Old MacDonald" themed afghan, DIY of a vanity tray. And then 2 wreaths I finished up: one for Memorial Day and the other is for the summer - really loved how this one turned out!

Breakfast ~ How do you do plan family vacations? First I pick a week, put in for PTO, make sure the hubs does the same (which I think I need to remind him again!), then pick a place or things to do! This year its a July vacay, and hoping to go to a cabin on a lake up North

Lunch ~ How do you stay on top of things? My planner keeps me in check, I would be lost without it1

Dinner ~ How do you keep calm in stressful situations? Vent/complain to a friend about the situation....

Midnight Snack ~ How do you stay organized? Lists....lots of lists. And with my little ocd on things, I have to have things in their rightful place. I have slacked a bit these last few months, and its starting to drive me a little insane, so lots of cleaning and reorganizing is happening this weekend!

Recipe for the Week ~ (instead of your recipe for life, what is it just for the week?) Turn it over to God, and not say anything...save yourself the heartache (its been a hard week)
