Food 4 Thought Friday ~ This week's questions:

******************

Breakfast ~ What is currently weighing you down?
Lunch ~ What is currently giving you hope?
Dinner ~ What is something you currently did that you wish you could do over?
Midnight Snack ~ What is currently something that heals you either physically or emotionally?
Recipe for the Week ~ (instead of your recipe for life, what is it just for the week?)

******************
MY ANSWERS
******************

Breakfast ~ What is currently weighing you down? The stress of my job, with all of the changes that are being made, and the pressure they put on you is getting to be too much.
Lunch ~ What is currently giving you hope? That some debt is about to be paid off, then maybe the work situation can change.
Dinner ~ What is something you currently did that you wish you could do over? A situation in the past, I wish I would have handled it a bit differently, even though I still feel that another is at fault as well.
Midnight Snack ~ What is currently something that heals you either physically or emotionally? Besides chocolate... reading the word of God.
Recipe for the Week ~ (instead of your recipe for life, what is it just for the week?) If you feel like you need a nap, then by all means go take one.... your body is telling you that you need more rest..... yeah, yeah that's what I'm going to tell the hubs when he gets home and see that I didn't really do much today!

Tasty Tuesday ~ No Bake Chocolate Eclair

I made this for Mother's Day and it was a hit. So quick and easy to make!

No-Bake Chocolate Eclair Dessert

Ingredients
Filling:
2 (3.5 oz.) boxes vanilla instant pudding
3 c. milk
1 (8 oz.) container Cool Whip non-dairy whipped topping {or 3 c. homemade whipped cream}
1 (14.4 oz) box graham crackers

Topping:
1/3 c. unsweetened cocoa powder
1 c. granulated sugar
1/4 c. milk
1/2 c. butter {1 stick}
1 tsp. vanilla extract

Directions
FOR THE FILLING: Combine dry pudding mix and 3 cups milk; beat until well mixed. Stir in Cool Whip.

Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.

FOR THE TOPPING: Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted.

Pour chocolate topping over the top layer of graham crackers. Spread evenly to completely cover graham crackers.

Refrigerate over night.

Happy Homemaker Monday!

What a busy weekend! A fun busy weekend! The boys came over yesterday, as did my inlaws for Mother's Day. The boys did all the cooking (well grilling), and waited on us. So nice not having to do prepare or clean up a meal at home! It was a gorgeous day spend with all that mean the most to me!

I am linking up with Diary of a Stay at Home Mom. Head on over to find some other great bloggers.

MY ANSWERS
******************

Breakfast ~ What is your recent biggest financial disaster? Forgetting to budget in an automatic payment on a medical bill, just need to remember to budget it in for this month and next. Don't like having to juggle things around to fix mistakes :(

Lunch ~ How do you deal with things you can't change? Honestly I don't handle it very well. But I try to do the best I can in the situation that is not changed and make the best of it.

Dinner ~ When things get stressful, what is your go-to for calming yourself? Grabbing my hook and working on whatever crochet project is next to my chair.

Midnight Snack ~ What is your current mantra for life?Take one day at a time.

Recipe for the Week ~ (instead of your recipe for life, what is it just for the week?) Live in the moment.
