Wednesday Medley ~ National Pigs-in-a-Blanket Day

On April 24, observe National Pigs-in-a-Blanket Day with just a few ingredients.

Celebrated across the world, the term often refers to a variety of different dishes. In the United States, Pigs-in-a-Blanket are often hot dogs or sausages wrapped in biscuit or croissant dough and baked. Pigs-in-a-Blanket are generally served as an appetizer or as breakfast. However, it can be served any meal time!

(My first thought was 'what am I going to do with this one'!! Bear with me, followers!)

1. Typically served as an hors d'oeuvre, have you ever made or had a Pig-in-a-Blanket? I have Do you like Pigs-in-a-Blanket? I don't like the pancake/sausage version...but love the lil smokies and roll ones.

2. Pigs-in-a-blanket are also known as devils on horseback, kilted sausages, and wiener winks. (Seriously.) Please make up another name for this fun little appetizer! sausage roll ups

3. In the UK, pigs-in-blankets are small sausages, or chipolatas wrapped up in bacon. Which country's version is most appealing to your taste buds? both.... anything with bacon has to be good, right??!

4. The first written record of pigs-in-a-blanket occurs in Betty Crocker's Cooking for Kids in 1957. In this digital world, do you still have a favorite cookbook you use most of the time? I do.. I love going through them! Is there a recipe you can share with us from that cookbook? I love this one from my Pampered Chef cookbook

Ham 'N Eggs Brunch Braid

4 ounces cream cheese
1/2 cup milk
8 eggs, divided
1/4 teaspoon salt
Dash ground black pepper
1/4 cup red bell pepper, chopped
2 tablespoons sliced green onions with tops
1 teaspoon butter or margarine
2 packages (8 ounces each) refrigerated crescent rolls
1/4 pound thinly sliced deli ham
1/2 cup (2 ounces) shredded cheddar cheese


1. Preheat oven to 375°. Place cream cheese and milk in bowl. Microwave on HIGH 1 minute; whisk until smooth. Separate 1 egg and reserve egg white for later use. Whisk egg yolk, remaining seven eggs, salt and black pepper into cream cheese mixture until well blended. Add bell pepper and onions to egg mixture; mix well.

2. Melt butter in large sauté pan over medium-low heat. Add egg mixture; cook, stirring occasionally, until eggs are set but still moist. Remove pan from heat.

3. Unroll crescent dough; do not separate. Arrange dough on stone pan with longest sides of rectangles across width of baking stone. Roll dough to seal seams. Starting on longest sides of baking stone, cut sides of dough into eight strips, about 1 1/2 inches wide and 3 inches long. Arrange ham evenly over center of dough. Scoop egg mixture over ham. Grate Cheddar cheese over egg mixture.

4. Starting at one end, lift one strip of dough; twist one turn and lay across top of filling. Repeat, alternating strips of dough to form a braid. Fold bottom edges up at ends of braid. Lightly beat reserved egg white; brush over dough. Bake 25-28 minutes or until deep golden brown.

5. What is your favorite cooking show on TV? I don't really have one

6. Tell us something random about your week, please! It never fails... the oldest always seems to hurt himself when he is out of town... this time he tells me he stubbed his toe over the weekend and now the whole foot is turning all sorts of fun colors, and he thinks he has broken it yet again... this will be the 3rd time... oy vey! Still waiting to hear what he found out from the doctor.

And then there is the hubs... he has an eye issue, that the eye doc got him in to an ophthalmologist ASAP - something about fluid build up behind his retina... he has to go monthly to get shots due to it being a blocked vein or something like that... ugh...

**update to the above health .. the oldest did indeed break his foot... and for the hubs, the DX is retinal occlusion, which is like a mini stroke in the eye... now I am more freaked out than when I originally worked on this post yesterday afternoon....

Celebrating Earth Day

1. What is your Favorite way to Celebrate Earth Day? I don't really celebrate it.

2. What is your Favorite thing to do Outside? walk the dog, hang out on the deck with the hubs, go kayaking

3. What is Something we can do to Waste less Water? I don't run the water while brushing my teeth, and will wash a lot of dishes before rinsing them

4. Why is it Important to care about our Earth? So we don't fill up with trash... I always remember the commercial with the Indian that has a tear running down his cheek with how we fill up the earth with so much trash. Does anyone else remember that one?

Tasty Tuesday ~ Cannoli Cheeseball


8 oz cream cheese, at room temperature
1/2 cup ricotta cheese
1/2 cup powdered sugar
1 teaspoon cinnamon
1 3/4 cups mini chocolate chips, divided
vanilla wafers or graham crackers, for serving

In a medium bowl, beat the cream cheese until smooth. Add the ricotta, powdered sugar, and cinnamon and beat until combined. Stir in 1 cup of the chocolate chips.

Lay out 2 pieces of plastic wrap perpendicular to each other. Dump the mixture out into the center. Gather the plastic up around the mixture and shape into a ball shape. Refrigerate for 2-4 hours, or overnight.

Place the remaining chocolate chips on a plate. Remove the cheeseball from the plastic wrap onto the chocolate chips. Roll in the chocolate chips to coat.

Serve the cheeseball with vanilla wafers or graham crackers.

The weather...Its 53° and the high for the day of 77° today...its a little cloudy right now, but its looking like its going to be a pretty nice day.

As I look outside my is breaking... and we have green grass again! And it looks like it needs a mowing already!! LOL

On my bedside table... my alarm clock, Kindle, iPad and a journal

On my reading pile... nothing at the moment...

Movies or Shows I watched this weekend... no movies over the weekend - just watched the shows that I DVR's over the week

On my TV... Chicago Series : Med, Fire, PD, Resident, 911, Blue Bloods, New Amsterdam, American Idol (first time in a long time I am continuing on past the auditions)

In the craft basket... working on a temperature afghan, got the sixteenth completed. Still working on the other afghans (no new pics for these).

Weekend in Review

I have started a new meme, called Weekend in Review.  I had participated in one like this a while ago, but it has long since stopped.  I liked writing down what I had down over the weekend, whether it was filled with lots activity or just a lazy weekend, so I went ahead and started my own version of this meme.

Friday ~ The start of this day was annoyed and then went to hell in a hand basket! Tried logging into my bank account on my phone.. only to get "can't verify your account" several times. Logged in via laptop, same thing... so did a reset password... got that worked out then headed out to do the grocery shopping....

Got through the store, after being extremely frustrated as they didn't have much of anything on the shelves that I needed, and then into the meat area and no stinkin ground chicken anywhere.. grrr... Lici may just have to go back to regular dog food... get to check out... go to pull out my wallet... to find no wallet... wth.. so suspended my order went back home, got the wallet that I had left on the chaise, when I was dealing with the stinking bank account.... back to Meijer to get my groceries. Stopped at Ken's to see if they had ground chicken.. nope.. then Family Fare.. none there only ground turkey.. so picked that up in frustration.

The search will be on for ground chicken...

John and I went and did some shopping.. we needed some parts for the kitchen faucet and the bathtub, so first stop was Ace Hardware. Next stop was to find some work shoes for him, and I got lucky and picked up a pair of dressy sandals. The next stop ws Chowhound to redeem Lici's birthday coupon. We picked out a new toy for her. Stopped at church so he could pick up his guitar to do some work on it. Then home for the night to veg.

Saturday ~ was a lazy day. I did get Lici's dog food made, but the rest of the day was lounging around, worked on the afghans, and cleaned out the DVR.

Sunday ~ Happy Resurrection Sunday! Happy Easter! Church in the am, then over to the inlaws for lunch and a family get together. Once home, worked on my temp afghan.
