Lots of ripe bananas

I had lots of ripe bananas, so today turned into a baking day, as well as my cleaning/laundry day. I big loaf, 3 mini loaves and a dozen nanner muffins! Yum!!!

Banana bread

1 3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/3 cup shortening
2 eggs, beaten
2/3 cup sugar
2-3 bananas, mashed

Combine flour, salt, baking powder and soda; set aside. Stir shortening until smooth and creamy, add sugar, mix well; add eggs, mix well. Slowly add flour and bananas, alternatively.

Bake at 350 - muffins - 20-25 minutes
mini loaf - 35-40 minutes
full size loaf - 55-60 minutes
