Tasty Tuesday ~ Fruit Salsa and Baked Cinnamon Chips

Fruit Salsa with Baked Cinnamon Chips

Ingredients
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)
10 (10 inch) flour tortillas (or use Stacy's cinnamon chips or cinnamon graham crackers)
melted butter or butter flavored cooking spray
Cinnamon sugar:
1 cup white sugar
2 Tablespoons cinnamon

Instructions
In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

For the Cinnamon Chips:
Preheat oven to 350 degrees.

Coat one side of each flour tortilla with melted butter. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet.

Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

This is best made the same day and not too far ahead of time so your apples don't start browning and the fruit gives off so too much juice and it gets runny. This salsa can also be serve with cinnamon graham crackers or cinnamon pita chips.

The weather...Its 56° and rain is on the horizon for today. Its going to be another cool week! Its been nice not having to run the air conditioner, and have the windows open.


Right now I am... working on this blog post and watching Heartland

Wednesday ~ eggs, bacon/sausage and toast
Thursday ~ pizza
Friday ~ polish dogs, fries and fruit

Sunday ~ pork chops, mashed potatoes/gravy, corn and rolls

On my to do list... laundry, housework, make dog food, work on the afghan

In the craft basket...Working on the backing for the afghan. I was in a "Christmas in July" swap ~ and needed to get mine made - it was also themed - rustic country cabin. This is what I made

I also found two dresses for my Style Dots Conference that's coming up in July. I am leaning towards the one on the left (the cold shoulder one); and then the jewelry that I will be wearing. Bonus, the hubs loves both dresses!!

Tasty Tuesday ~ Summer Pasta Salad



Ingredients

16 oz pasta, cook according to package
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
2-3 cucumbers, chopped
1-2 containers of grape tomatoes, quartered
1 16 oz Zesty Italian dressing
1 TBSP McCormick Salad Supreme seasoning (can add more if like)


Mix all ingredients together, chill and serve.

You can add chunks of pepperoni, or other vegetables of your liking.

For Today... June 19th, 2017

The weather...Its 60° and the sun is shining!! We are in for a much cooler week to kick off the official start of Summer. Last week was a hot one, which I loved, but my pup not so much.


Right now I am... working on this blog post and eating a bowl of Frosted Mini Wheats.

Tasty Tuesday Chocolate Chip Cookie Delight

Ingredients

1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough
1 package (8 ounces) cream cheese, softened
1 cup confectioners’ sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided
3 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
1 package (3.4 ounces) instant vanilla pudding mix
Chopped nuts, chocolate curls and miniature semisweet chocolate chips, optional

Directions

Let cookie dough stand at room temperature for 5-10 minutes to soften.

Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until golden brown. Cool on a wire rack.

In a large bowl, beat cream cheese and confectioners’ sugar until smooth. Fold in 1-3/4 cups whipped topping.

Spread over crust.

In a large bowl, whisk milk and pudding mixes for 2 minutes.

Spread over cream cheese layer.

Top with remaining whipped topping.

Sprinkle with nuts and chocolate curls if desired. Cover and refrigerate for 8 hours or overnight until firm.

Yield: 15 servings

Tasty Tuesday ~ Black bean and corn salsa

A quick and easy salsa to whip up. Serve with chips, on baked potatoes, with grilled chicken, on tacos and burritos, or anyway you can think of!


Black Bean and Corn Salsa

Ingredients

2 (8 ounce) cans Rotel tomatoes & chilies (I use "regular" as opposed to "mild" or "hot")
1 (14 ounce) can Mexican-style corn
1 (16 ounce) can black beans
1 (4 ounce) can green chilies (optional)
1 cup diced sweet onion
garlic powder, to taste
chili powder, to taste
cumin, to taste
1⁄2 cup coarsely chopped fresh cilantro
dried cilantro, to taste (if you dont use fresh)
salt and pepper, to taste

Directions

Except for one can of the Rotel tomatoes, drain canned vegetables.

Mix together all ingredients, making sure spices are well blended in the veggies.

Cover and refrigerate, allowing flavors to blend.
