Tasty Tuesday ~ Caramel Apple cheesecake Jars



Caramel Apple Cheesecake Jars

Ingredients
8 ounces cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 1/2 cups Cool Whip
1 1/2 cups apple pie filling (homemade or store bought)
2 tablespoons caramel sauce
1 cup graham crackers, crushed
2 tablespoons butter, melted


INSTRUCTIONS
1) In a large bowl, beat cream cheese, sugar and vanilla extract. Once combined, fold in cool whip. Scoop into a piping back or ziplock bag with a corner cut off, to make layering easier.

2) In a second bowl, mix together apple pie filling and caramel sauce. Scoop into a piping back or ziplock bag with a corner cut off to make layering easier.

3) In a third bowl, combine crushed graham crackers and butter. Mix until it is the consistency of wet sand.

4) In a mason jar (or any any glass jar/cup) build your cheesecake: 1 layer graham cracker crust, 1 layer cheesecake mixture, 1 layer apple pie filling. Continue this pattern until you reach the top. Cover the top with a dash of caramel sauce and a thin layer of crushed graham crackers. Flatten.

5) Serve and enjoy!

For Today... Oct 16th, 2017

The weather...Its 45° with a high of 57° for today. The cooler weather is here to stay I think... still not ready to turn on the heat.... told the hubby to start layering up or pull out the extra blankets.... trying to hold off until Nov 1st!

Right now I am... working...and trying to finish up this blog post

On my reading pile... I am half way through Uninvited (loving it), but have to switch over to "Girls with Swords" we decided over the weekend that this will be our next Bible study.


Movies or Shows I watched this weekend... Didn't watch anything over the weekend

On my TV... Chicago Fire - PD, Grays, Blue Bloods, This Is Us, Will and Grace, The Brave

On the menu for this week... Menu for the week:
Monday ~ hamburgs, fries and peaches
Tuesday ~ mac-n-cheese and kielbasa
Wednesday ~ breakfast
Thursday ~ pizza
Friday ~ lefovers
Saturday ~ out - date night
Sunday ~ ??

On my to do list... laundry, housework, get Fall decor out (I really, really need to do this this week!)

In the craft basket... Still working on the camper set, I need to cut out the cardboard, so I can start piecing it altogether. At a stand still right now, need to get some fabric to line a few items before sewing them all together

Looking around the house... I can see that with my work schedule change, I have been neglecting the housework. I need to get myself back on track and get a new routine in place!

On my prayer list... For my Uncle Mike and his continued recovery from his stroke, and for my niece, she is having problems with her blood pressure, and not able to travel up here for her baby shower. Need to keep that baby baking a little longer!!!

Tasty Tuesday ~ Chili



Its finally Fall here in Michigan.... so a big pot of chili is on the menu for today!!

Ingredients
1 - 1 1/2 pounds of lean ground beef
1 c chopped onion
1 c chopped celery
1 c red bell pepper (I used half a red, orange and yellow)
2 cloves garlic, minced
1/4 -1/2 tsp cayenne pepper
2 TBSP Worcestershire sauce
2 TBSP sugar
1 tsp oregano
1 TBSP beef soup base
1 1/2 - 2 TBSP chili powder
3/4 tsp salt
1/8 tsp pepper
3 (15 oz) cans diced tomatoes
1 (15 oz) can kidney beans
1 (15 oz) can chili beans in sauce
1 1/2 c water

Directions:
In a large pot over medium-high heat, brown ground beef.
Stir in the onions, pepper and celery, cook until tender.
Stir in the garlic, cook one minute.
Add in the seasonings: chili powder, cumin, oregano, sugar, salt, pepper and cayenne pepper.
Stir in the tomatoes. Worcestershire sauce, beef base and water.
Let simmer about 1 1/2 hours.
Add kidney beans and the chili beans, heat for about 30 minutes.

Wednesday ~ breakfast
Thursday ~ pizza
Friday ~ sub for the hub or leftovers - I will be gone
Saturday ~ not sure yet, picking up something on the way home from my leadership training

Tasty Tuesday ~ Chocolate Scotcheroos

Ingredients
1 cup light corn syrup
1 cup sugar
1 cup peanut butter
6 cups Kellogg's® Rice Krispies® cereal
1 package (6 oz., 1 cup) semi-sweet chocolate morsels
1 cup butterscotch chips

Directions
1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.

2. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.

Note: Before measuring the corn syrup, coat your measuring cup with cooking spray--the syrup will pour easily out of the cup.

Movies or Shows I watched this weekend... I finished up Wentworth... now have to wait until the next season starts next year... I have restarted watching Sons of Anarchy. Got all caught up on shows that were on the DVR.... many of the opening seasons had me teary eyed.

Sunday ~ pork chops, mashed potatoes, some veggie, rolls

In the craft basket...I am working on a camper set, its going better than I thought it would...can't wait to get it all complete and all the pieces in place!!

Tasty Tuesday ~ Mini Strawberry Napoleons

Mini Strawberry Napoleons


Ingredients
1/2 of a 17.3-ounce package Puff Pastry Sheets (1 sheet), thawed
1 package (about 3 ounces) instant vanilla pudding and pie filling mix
1 cup milk
1 1/2 cup sweetened whipped cream or thawed frozen whipped topping
1 1/4 cup sliced strawberries
2 tablespoons confectioners’ sugar

Directions
Heat the oven to 400°F.

Unfold the pastry sheet on a lightly floured surface. Cut the pastry sheet into 3 strips along the fold marks. Cut each strip into 4 rectangles. Place the pastries onto a baking sheet.

Bake for 15 minutes or until the pastries are golden brown. Let the pastries cool on the baking sheet on a wire rack for 10 minutes. Split each pastry into 2 layers, making 24 in all.

Prepare the pudding mix according to the package directions except use 1 cup milk. Fold in the whipped cream.

Reserve 8 top pastry layers. Spread 2 tablespoons pudding mixture on each of 8 bottom pastry layers. Top each with 1 tablespoon strawberries and another pastry layer. Top with the remaining pudding mixture, strawberries and the reserved top pastry layers. Sprinkle with the confectioners’ sugar.

Ingredient Note: For 1 1/2 cups sweetened whipped cream, beat 3/4 cup heavy cream, 2 tablespoons sugar and 1/4 teaspoon vanilla extract in a medium bowl with an electric mixer on high speed until stiff peaks form.

Serving Suggestion: Drizzle with spoonfuls of chocolate sauce, if desired.
