Tasty Tuesday ~ Apple Pie

Who doesn't love a good apple pie recipe? I was in the mood to bake today, so whipped out an apple pie.



Ingredients
6 cups thinly sliced apples
3/4 cup sugar
2 TSPS flour
3/4 tsp cinnamon
1/4 tsp salt
1/8 nutmeg
1 TBSP lemon juice

Peel, core, slice the apples, then mix all of the ingredients with the apples, combine well. Pour into the prepared pie pan, add the second pie crust. Vent the top.

Bake in a 425 oven for 40 - 45 minutes. You may need to place a ring of tinfoil around the edges of the pie, to prevent from the crust to get to brown.

The weather...Its 67° right now and a high of 80°! The humidity level has dropped, so its going to be a nice day... its cloudy right now, but the sunny skies is on the horizon for later today.


Right now I am... working on this blog post and watching Big Brother

On my reading pile... Etched...Upon My Heart by Jill Kelly (almost finished with this one); Sisterland by Curtis Sittenfeld; and Happily Ever After by Trista Sutter......I need to get back to reading and get this list knocked down


Movies or Shows I watched this weekend... no shows/movies this weekend.... it was a busy conference weekend

On my TV... Big Brother on the DVR - tv Bachelorette, Fosters, Big Brother

Monday ~ pork chops, mashed potatoes/gravy, corn and rolls
Tuesday ~ polish dogs, beans and a salad
Wednesday ~ breakfast
Thursday ~ pizza

On my to do list... laundry, housework, make dog food, crochet

In the craft basket...I did start a new afghan, working on some granny squares, and then some baby shoes for a order

A Wrinkle In Time



Not that I am wishing time would go fast, but I am looking forward to seeing this movie.

“A Wrinkle In Time” starring Chris Pine, Reese Witherspoon, Mindy Kaling, Oprah and newcomer Storm Reid as “Meg Murry.”

Tasty Tuesday ~ Slow Cooker Pork Chops

Slow Cooker Pork Chops

Ingredients
4 bone-in pork chops (¾ – 1-inch thick, around ½ pound each)
Kosher salt, to taste
Ground black pepper, to taste
Brown sugar, to taste (optional)
2 Tablespoons butter, divided
1 large onion, sliced (about 2½ – 3 cups)
1 teaspoon dried thyme or rosemary (or 1 Tablespoon chopped fresh thyme or rosemary)
1 cup chicken broth or stock
¼ cup apple cider (no added sugar)
3 Tablespoons low sodium soy sauce
1 Tablespoon Worcestershire sauce
2 – 3 Tablespoons cornstarch mixed with 2 Tablespoons water

Directions
Season the pork chops with salt, black pepper, and brown sugar (if using) to taste. Either cook immediately, or cover and refrigerate overnight. (Seasoning the night before will give your pork chops a deeper flavor, but isn’t necessary.)

Heat 1½ tablespoons of butter in a large sauté pan over medium-high heat. Sear the pork chops on both sides until they’re golden brown, approximately 3 – 5 minutes per side. Add the seared chops to the slow cooker. (It’s OK to overlap the pork chops slightly, but don’t stack them on top of each other).

Add the remaining ½ tablespoon of butter to the sauté pan, followed by the sliced onions. Cook the onions until they begin to brown, about 3-5 minutes. Add the herbs and cook for another 30 seconds or until fragrant. Add the chicken broth, apple cider, soy sauce, and Worcestershire sauce to deglaze the pan. Stir everything to combine, and make sure to scrape up the browned bits from the bottom of the pan. Pour the cooking liquid and onions over the pork chops.

Cook for 4 – 5 hours on low or for 2 – 3 hours on high.

Remove the cooked pork chops from the slow cooker and set them aside on a plate. Whisk the cornstarch and water mixture into the cooking liquid. Return the pork chops to the slow cooker and cook on high until the sauce is thickened and the pork chops are fork-tender, about 30 – 60 minutes. (If the sauce doesn’t thicken enough, use additional cornstarch slurry, but keep in mind that the sauce will thicken more as it cools.) Serve with mashed potatoes, rice, veggies, or your favorite sides.

The weather...Its 69° right now and a high of 76°! Its going to be a rainy day today. Right now lots of thunder, so I now have a pup shaking at my side. Its going to be a long day!

Tuesday ~ hamburgs and fries
Wednesday ~ ham and egg brunch braid

Sunday ~ out for the hubs birthday and to kick start our vacation

On my to do list... laundry, housework, make dog food, work on the afghan

In the craft basket...Working on the backing for the afghan, I started on the fabric and messed up and had to go back and get more fabric, I am so irritated with myself. Now it will be crunch time to get it finished by Saturday for the shower. The other afghan I started last week is finished, but can't share the final product, as I am not sure if she reads my blog. I also whipped out a few other items to go with the afghan.

Friday ~ Grocery shopping and errands, worked on shower things


Saturday ~ worked on planner, went with the hubs to get his hair cut and out for lunch. Worked on afghan, and kicked myself as I messed up - back to Joann's to get more fabric. Hung out on the deck with the hubs and shot a pellet gun


Sunday ~ church, out for lunch stopped at Lowe's then power washed the house and did some maintenance on it. The rest of the night was pretty low key.
