Tasty Tuesday ~ Morning Glory Muffins

Morning Glory Muffins

2 cups all-purpose flour
1 cup white sugar
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
1 cup grated carrots
1 cup grated zucchini
1 large grated apple
3/4 cup flaked coconut
1/2 cup dates, pitted and chopped
1/2 cup chopped nuts
3 eggs, beaten
2/3 cup vegetable oil
2 tsp vanilla

Preheat oven to 350 degrees. Prepare muffin pans by either spraying with cooking spray or using muffin papers.

In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and salt.

In a second bowl, combine carrots, zucchini, apples, coconut, dates and nuts. Stir in eggs, oil and vanilla. Add this mixture to the dry ingredients; stir until smooth.

Spoon or scoop the batter into the prepared muffin pans. Bake 18 to 20 minutes.

Makes 18 muffins.

Tasty Tuesday ~ Magic Cookie Bars

Ingredients
1/2 cup butter or margarine, melted
1 1/2 cups graham cracker crumbs
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
1 cup semisweet chocolate morsels
1 cup butterscotch chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Directions
Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.

Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.

Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

For Today... March 20th, 2017 ~ Happy 1st day of Spring!!

The weather...The snow is gone - yay! Its 39 out right now, but the high is up to 58 today!


On my reading pile... Still the same from last week: Reshaping it All by Candace Cameron Bure (rereading this); Etched...Upon My Heart by Jill Kelly; Sisterland by Curtis Sittenfeld; and Happily Ever After by Trista Sutter


Movies or Shows I watched this weekend... We watched Fences with Denzel Washington....it was ok...different from his other movies.... he is my all time favorite actor..but in this one he was a jerk

On my TV... all caught up on DVR's shows.. glad that Chicago Fire and PD are back on this week.

On the menu for this week... Menu for the week:
Monday ~ ravioli, garlic bread and a salad
Tuesday ~ sloppy joes, fries and peaches
Wednesday ~ omelets, fried potatoes, sausage and toast
Thursday ~ pizza
Friday ~ chicken soup (new recipe), rolls
Saturday ~ steak, salad, fruit and rolls
Sunday ~ not sure yet

On my to do list... laundry, housework, make dog food (she is one spoiled pup)

What I am sewing, crocheting, knitting or creating...afghans, one is just about finished

Monday ~ housework, laundry, making dog food, crocheting, working on Bible Study
Tuesday ~ work
Wednesday ~ work
Thursday ~ work
Friday ~ groceries, errands, a diy maybe
Saturday ~ yarn shopping with a friend for an afghan she wants me to make for her
Sunday ~ church, home to veg for a bit, then off to the Women's meeting for church

Looking around the house... its looking nice and tidy, finally rearranged the living room last night, so not a lot of picking up needs to be done today! yay!

From the camera... the beautiful anniversary card from my love, and my Easter wreath I made.

What I'm wearing today... black yoga pants and a purple and grey tshirt

One of my simple pleasures... Going on a leisurely walk with the pup. (where I am headed in just a few minutes)

Tasty Tuesday ~ Fast Family Fajitas


Ingredients

1 medium green bell pepper
1 medium red bell pepper
4 boneless, skinless chicken breast halves (about 4 ounces each) **I used 1 lb stir fry beef**
2 teaspoons vegetable oil, divided
1 garlic clove, minced
1 envelope onion soup mix
1/2 cup water
1/2 cup salsa
12 (7-8 inch) flour tortillas, warmed

Optional toppings: guacamole, additional salsa, shredded Colby & Monterey Jack cheese blend and sour cream

Directions
Cut bell peppers into 1/2-inch strips using Utility Knife. Cut chicken crosswise into thin strips.

Add 1 teaspoon of the oil and chicken to Stir-Fry Skillet; stir- fry over medium-high heat 3-4 minutes or until chicken is no longer pink. Remove from skillet; set aside. Add remaining oil, bell peppers and garlic pressed with Garlic Press; stir-fry 1-2 minutes or until vegetables are crisp-tender.

Add chicken, soup mix, water and salsa to bell pepper mixture. Cook and stir 2-3 minutes or until heated through.
To serve, place chicken mixture in center of tortillas. Serve with toppings, if desired.

Yield: 6 servings

For Today... March 13th, 2017

The weather...Is back to a winter wonderland. This time last year I was in the sunny South...oh how I long to be back down there!


On my reading pile... Reshaping it All by Candace Cameron Bure (rereading this); Etched...Upon My Heart by Jill Kelly; Sisterland by Curtis Sittenfeld; and Happily Ever After by Trista Sutter


Movies or Shows I watched this weekend... I didn't watch much TV this weekend, just lots of Youtube videos....I did watch Walking Dead though (that is a must..LOL), I do have lots of DVR shows to get caught up on.

On my TV... right now its a catch up day of DVR shows: Blue Bloods, Greys, Chicago Med and Colony

On the menu for this week... Menu for the week:
Monday ~ spaghetti, garlic bread and a salad
Tuesday ~ burgers, salad and peaches
Wednesday ~ blueberry pancakes (didn't have last week)
Thursday ~ pizza
Friday ~ stuffed pork chops, green beans, salad and rolls
Saturday ~ going out for our anniversary
Sunday ~ church potluck

On my to do list... laundry and coloring my hair are a must for today, as well as the normal housework


What I am sewing, crocheting, knitting or creating...Finishing one more snail, then back to the afghans.

Breakfast ~ Do you read more from hard copy literature, or from online literature?
Online more...there just doesn't seem to be much time these days, when I finally sit down, I am just too tired! I wonder how I had time back before internet....I always had a book I was reading.
Lunch ~ What are you anticipating most right now?
Our Ladies Tea at church...while its not until May, it will be here before I know it. Planning it out, and making sure every thing gets done on time, and everyone leaves feeling blessed is starting to stress me out.
Dinner ~ What do you do when you have to wait?
I usually have my phone, and will scroll through FB or play a game or two
Midnight Snack ~ A.) What are you currently feeling failure with? What are you currently feeling success with?
Learning the piano/keyboard...I want to learn so bad, but trying to fit in lessons, and actually practice is just not going well at all.
B.) What are you currently feeling success with? My crochet projects. I love all the compliments I get, and then when someone wants me to make them things, it just makes me feel good
