Tasty Tuesday ~ Reece's Stuffed Rice Krispie Treats



Ingredients

5 tbsp. butter
1 (10-oz.) bag marshmallows
1/2 c. smooth peanut butter
Pinch kosher salt
6 c. Rice Krispies Cereal
12 Reese's cups
1/4 c. melted peanut butter, for garnish
1/4 c. melted chocolate, for garnish


Directions

Line a 9”-x-13” pan with parchment paper and grease with cooking spray. In a large pot over medium-low heat, melt butter. Stir in marshmallows, peanut butter, and salt and stir until mixture is melted. Remove from heat.

Immediately add Rice Krispies and stir with a rubber spatula until combined. Working quickly, press half of mixture into an even layer in pan, then top with a layer of Reese’s. Press remaining mixture over Reese’s.

Drizzle with melted chocolate and peanut butter, then refrigerate until cool, about 30 minutes.

Slice into squares and serve.

Tasty Tuesday ~ Absolutely Almond Thumbprint Cookies



Ingredients

1 package Absolutely Almond Pound Cake Mix
½ cup butter, softened
1 large egg, beaten
1-1½ tablespoons water
½ cup Rhubarb Strawberry Fruit Spread


Directions

Preheat oven to 350°F. In large bowl, combine Absolutely Almond Pound Cake Mix™, butter and egg; mix until well combined.

Using hands, knead until the consistency of thick, moist dough. Form into generous 1-inch balls.

Place 2 inches apart on a greased large baking sheet. Bake 10 minutes. Remove from oven; using back of a teaspoon or thumb, make a round indentation in each cookie. Fill with Rhubarb Strawberry Fruit Spread. Continue baking 4-6 minutes or until lightly browned.

Makes 8-10 servings.

Make Ahead & Freeze: Prepare through step 2. Place in a gallon freezer bag or storage container between sheets of wax paper. Seal well, label and freeze. Thaw completely. Preheat oven to 350°F and continue with step 3.

As I look outside my window...daybreak is just starting, you can hear the birds chirping....so peaceful

On my reading pile... I need to make a trip to the library

Movies or Shows I watched this weekend... I binged watched season 1 of Riverdale on Netflix

On my TV... Colony, Fear the Walking Dead

On the menu for this week... Menu for the week:
Monday ~ sketti, garlic bread and a salad
Tuesday ~ polish dogs, beans and fruit
Wednesday ~ breakfast
Thursday ~ pizza
Friday ~ pork tacos
Saturday ~ cookout with the worship team
Sunday ~ not sure, maybe go out after church

On my to do list... housework, working on craft projects

In the craft basket...working on cross stitch projects, a sunflower afghan (28 squares are finished

Tasty Tuesday ~ Pistachio Fluff



Pistachio Fluff

Ingredients

1 3.5 oz instant pistachio pudding mix
1 20 oz can crushed pineapple undrained
1 cup mini marshmallows
1/2 cup chopped pecans
1 8 oz tub whipped topping (COOL WHIP) thawed


Instructions

In a medium bowl, combine pudding mix with crushed pineapple.

Stir well.

Stir in marshmallows and chopped pecans.

Then gently stir in whipped topping.

Chill for about an hour before serving.

Happy Homemaker Monday

Oh my....its been a month since I have been here sharing my week with you all. It was a long hard month. Life just got in the way and a little stressful. Over my birthday weekend, I "ran away" so to speak with my best friend. Her daughter was in a volley ball tournament for college and the championship was held in Missouri. We had an awesome time, and the time away was exactly what I needed!

Tasty Tuesday

Making some fun cookies from a brownie mix.



Ingredients
1 box Milk Chocolate Brownie Mix
⅓ cup vegetable oil
1 large egg
1 tbsp. water
1 cup dried banana chips broken into small pieces
½ cup chopped walnuts
½ cup chopped maraschino cherries


Baking Instructions
Preheat oven to 350°F. Lightly spray baking sheets with nonstick cooking-spray.

Combine brownie mix, oil, eggs and water; stir with a fork to combine into a stiff dough. Dough will seem dry, but will completely moisten as you stir. (Knead briefly by hand, in the bowl, if preferred.) Stir in banana chips, walnuts and cherries.

Working with 1 heaping tbsp. of dough at a time, lightly roll dough into balls and place about 2" apart on baking sheets. Lightly press each ball with the heel of your hand to flatten slightly.

Bake 12 minutes until just set in the center. Cool 1 minute on pans. Transfer to wire racks with metal spatula and cool completely. Variation:

Dried cherries can be substituted for maraschino cherries. For an additional chocolate punch, stir in ¼ cup chocolate chips.
