Tasty Tuesday ~ Grilled Pork Chops with Apple Slaw

Grilled Pork Chops with Apple Slaw

Toasting the cumin intensifies the flavor and helps to infuse the spice throughout the dish.
Ingredients
2 tbsp plus 1/2 tsp ground cumin
5 tbsp lime juice
2 tbsp honey
1 tbsp finely chopped fresh oregano
1 tbsp Dijon mustard
1 garlic clove, pressed
1 tsp salt, divided
1/2 cup olive oil
4 oz green cabbage (about 1 cup thinly sliced)
2 stalks celery, peeled
1 medium gala apple
4 bone-in pork loin chops (8 oz each)
1/2 tsp coarsely ground black pepper

Directions
For vinaigrette, place 2 tbsp of the cumin in (8-in.) Sauté Pan. Cook over medium heat 1-2 minutes or until fragrant, stirring constantly. Combine toasted cumin, juice, honey, oregano, mustard, pressed garlic and 1/2 tsp of the salt in Small Batter Bowl; whisk until smooth. Slowly add oil, whisking constantly; set aside.

Thinly slice cabbage using Chef’s Knife. Thinly slice celery on a bias. Cut apple into 1/4 x 2-in. pieces. Place cabbage, celery, apple and half of the vinaigrette in Stainless (4-qt.) Mixing Bowl; toss to coat.

Heat Grill Pan over medium heat 5 minutes; spray with vegetable oil. Combine remaining cumin, salt and pepper in (1-cup) Prep Bowl; sprinkle over pork. Cook pork 4-6 minutes or until Pocket Thermometer registers 150°F near inside of the bone, turning once. Serve pork with slaw and remaining vinaigrette.

Happy Valentine's Day!!

I found this recipe for Cherry Bread from a video that was shared on Facebook. I saved the video, then went to the link where the recipe was posted so I could print it out and make it for an early Valentine's Day treat. It is quite tasty and the hubs loves it!

Easy Cherry Bread Recipe

Ingredients
3/4 cup granulated sugar
1/2 cup milk
1/2 cup oil
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 jars maraschino cherries (10 ounces each)

Glaze:
2 cups powdered sugar
2 tablespoons melted butter
1/3 cup maraschino cherry juice
1/2 teaspoon almond extract

Instructions

Preheat the oven to 350 degrees.

In a medium bowl, stir together the sugar, milk, oil and egg. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.

Drain the maraschino cherries, reserving the juice for the glaze. Coarsely chop the cherries in a food processor or with a knife. Gently fold the cherries into the batter.

Pour the bread batter into a greased 9"x5" bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.

To make the glaze, combine the powdered sugar, melted butter, cherry juice and almond extract in a small bowl. Mix until it is smooth.

Once the bread is cool, spread the glaze on top of the bread. Slice and serve.

Outside my window...The sun is shining, and its a brisk 30 degrees out... with a high of 40. I will take it... the sun is shining!!

I am thinking... about where I put my Valentine's table cloth.

I am thankful... for sunny days...its been awhile, so I am going to enjoy today.

I am wearing... a purple top and lavender cords

I am creating... Still working on the afghans, and just started a mermaid tail afghan. I am also working on some snail and teacup amigurumis.

I am reading (read) /watching (watched) / listening... Watching Chicago Fire, and just started reading Sisterland

In my kitchen... Menu for the week:
Monday ~ baked ziti, garlic bread and a salad
Tuesday ~ Grilled Pork Chops with Apple Slaw, green beans, rolls and cherry bread for dessert
Wednesday ~ french toast, bacon/sausage
Thursday ~ pizza
Friday ~ burritos
Saturday ~ out for dinner, for a birthday dinner for the oldest
Sunday ~ potluck at church

For Today... February 6th, 2017


Outside my window...Its still dark out. It a brisk 19 out, but they say we are to have sunny skies and highs of 40...whoo hoo!

I am thinking... about plans that are in the works to spend a day with my niece who is up from Florida next week.

I am thankful... for time spent with my boys. Our youngest stopped over yesterday to help with some settings on my husbands phone, and then stayed to watch the Super Bowl with us.

One of my favorite things... french toast bagels with brown sugar cream cheese

I am wearing... a hoodie and black fleece comfy pants

I am creating... Still working on the afghans, and just started a mermaid tail afghan. I am also working on some snail and teacup amigurumis. This is one of the snails
And I just finished this Valentine wreath for my front door


I am reading (read) /watching (watched) / listening... Watching Greys, and just started reading Sisterland

I am hoping... to get our taxes finished and submitted so we can get them back quickly so I can plan a weekend getaway!

Trying new things

Tried a new recipe, and while I liked it, the hubs didn't really care for it. Bummer. He said he wasn't a fan of salmon. I wish he would have told me that when I was telling him about the recipe. So now I need to try it with a different type of fish. I hate when I make something and then it goes to waste. I will keep trying, as I am tired of having the same food items day in and day out.

The recipe I tried was, Honey and Pecan Glazed Salmon

1/4 cup honey
4 tsp finely chopped pecans
1 TBSP soy sauce
1/4 tsp salt
1/4 tsp black pepper

Preheat oven to 425

Combine first three ingredients in a large zip top bag. Sprinkle fish with salt and pepper; add to bag and seal. Marinade in refrigerator at least 15 minutes. Remove fish and nuts from bag, reserving marinade. Place fish on foil lined pan and top with nuts. Bake at 425 degrees for 15 minutes or until fish flakes easily with a fork, basting fish twice with reserved marinade while baking.

I served it with green beans and a southwestern style rice. I may still make this on occasion for myself.
